And so this is Christmas

I'm going to say it again: THANK YOU people of the world, for being such great followers. I am so glad to be a part of this fun blogging community. Merry Christmas!

Now, onto more serious stuff. I cheated on the challenge. Shizah! Oh well, it's nothing surprising, I said I would so God forgive me. What have you all been doing? I saw some bloggers making incredible gingerbread houses and I cannot tell you how jealous I am of them, I've always wanted to make one of those! They always remind me of the witch's house in Hansel and Gretel. Yumm, that's what dreams are made of. The eatable house. Not the part where the witch lures the children inside. Obviously.

-Do any of you have suggestions on what to bake? I would more than LOVE to hear your ideas. Running low on imagination here.

Absolutely love the photos! As for baking, I bake a lot of chocolate fudge cake which is always good, but for christmas my room mate at Uni bought me a muffin cook book which has some awesome recipes in.

Why don't you try Rocky Road Chocolate Muffins

Ingredients
Oil or melted butter for greasing
225g/8oz of plain white flour
55g/2oz of cocoa powder
1/8 tsp salt
115g/4 oz caster sugar
100g/3 1/2 oz white chocolate chips
50g/1 3/4 oz white mini marshmallows cut in half
2 medium eggs
250 ml/9fl oz milk
6 tps sunflower oil or 85g/ 3oz butter, melted and cooled.

Step one:
Preheat the oven to 200 c/400 F/ Gas Mark 6
Grease a 12 cup muffin tin or line with 12 paper cases. Sift together the flour, cocoa powder, baking powder and salt into a large bowl. Stir in the sugar, chocolate chips and marshmallows

Step 2:
Lightly beat the eggs in a large bowl then beat in the milk and oil. Make a well in the centre of the dry ingredients and pour in the beaten liquid ingredients. Stir gently until just combined; do not over-mix

Step 3:
Spoon the mixture into the prepared muffin tin. Bake in the preheated oven for about 20 minutes until risen and firm to the touch.

Step 4:
Leave the muffins in the tin for 5 minutes then serve warm or transfer to a wire rack to leave to cool.
